Super Charge Your Salads

The long winter has taken it's toll.

A lack of fresh air, sunshine and exercise has left me feeling grey.

I really feel the need for an energy boost - which now spring is here means bring on the salads.

Not limp lettuce leaf affairs you understand - I'm talking super charged affairs packed with all sorts of amazing good stuff.

It's not that I don't try to eat healthily throughout the year.

It just seems easier to throw together a whole load of super foods when you haven't got to cook everything and when you're no longer tempted to stuff yourself full of carbs just to keep warm.


The other great thing about salads is that you don't need a strict recipe. I love lots of the salad ideas in the Hugh Fearnley-Whittingstall's and Nigel Slater's books; but that's just what they are - ideas that can be tweaked and twisted with whatever is available or that I fancy.

The thing I am trying to do, is make sure is I've got as many super foods available as possible in the cupboards or on the shopping list so I really can super charge these salads.

I've made myself a list of all the amazing super foods that are great thrown in salad.

Great greens that are so much tastier than plain lettuce. Herbs - from the herb garden I planted last year - which are unbelievably rich in anti-oxidants. Some bright colour veg to get the full range of vitamins. Berries and other super fruits that are so good for flavour. Mineral dense nuts and seeds. Some alternative "grains" rather than pasta - I'm a big convert to quinoa and spelt and love the idea of trying hemp. Fibre and protein rich pulses. And finally, extra doses of all the omega oils.
